It's been a long time...

Yes, it's been a long time since I wrote here the last time. A month of silence... Not that I forgot to wrote or had nothing to say, but only because of the fact I am too busy. Way too busy!
To say the truth I never worked so much in my life, since I always own the company I worked for, and I am discovering that it is a lot of less work to own than to work for...LOL! And I couldn't figured that before...Duh!
Since I started at Captain Olivers I didn't took one single day off! Even not half a day... I feel it is not possible the way the things are now there. So much to do, at all levels! Administrative, Maintenance (not that I am doing the maintenance myself but I supervise it and not much was done in the past yearssssss...), restructuring (restructuring of the way the staff is thinking, the Kitchen is reacting, the team is working, etc), re-decoration (re-look the entire dining room), find solutions to have a better control of the "disappearing merchandises and stock" (this was solved very quickly with 8 surveillance cameras put all over the kitchen, the reserve, the walkin cooler, the walkin freezer and the Bar...), working on a new menu (have the new menu approved will be the tougher part since the Owner want changes but doesn't want changes!... Slowly, Philippe, slowly but surely!).
Anyhow, that's a lot of work since I am , obviously, participating to the service alongside the wait staff, being a working manager. And when I say "service", oh boy!!!... I was used to a service of 15 to 25 people a night! That's it... but this place does 80, 90, 100,120...150 people a night! (and 50 to 60 at lunch... and 30 to 40 at breakfast).
But overall , I think things are getting better, and some improvement had already been made. I knew it was going to be a big challenge, and so far so good, all the "reforms" are going through smoothly.
I won't write much longer today, and I no pictures ready nore available to post, but I hope that I will be able to post longer very soon, and not a month from now...

frukisPhilippe, I was kind of worried about you guys, I am really glad that things are going welleven thru I am sure that thay are overpowering sometimes. Keep up the good work and hopefully we will see you in May...Maureen

Thanks Maureen. Yes sometime "work" can be over powering, I am realising that for the first time of my life. I must have been one of those previledge people before, though, to do not encountering that in my original professional life...
Wendy, it was a wonderful evening and we were so glad to see Frank and you, and have the time to have "feeeew" drinks with both of you LOL... How did you felt the next day? Personally , I was drained LOL... BTW, I checked of that "cordon bleu", and the next evening it went "almost" right, but still I'll take it out of the new menu.
Hi Barbara, yeah, finally I could find few minuts to blog... In fact to tell the truth, I even couldn't remember my login password !!! I start to freak out and I found a way to retrieve it. Improvements are coming along, and wendy and Frank helped me few nights ago to know better what people really think about their choice of meals, because the usual "anonymous" (unregistered...LOL) customer always say"oh everything was fine.." and then criticise in the back. At least when you know your guest, they feel more at ease to tell you the reality and you can correct what is wrong. I am a lucky guy.

Welcome back to the living Philippe... the worst is not over yet but you are beginning to see the light and that's a good thing. It sounds like you are really beginning to enjoy the overall improvements and because of this, I'm sure that your customers will as well. Keep up the good work!!!
